White Chocolate Strawberry Popcorn

This popcorn is so delicious and the perfect snack. Freshly popped kernels are coated in tasty white chocolate, mixed with dried strawberries, and drizzled with melted dark chocolate. This easy treat good any time of year, but I especially love it on Valentine's Day!

An addicting sweet and easy snack.

There was a time in my life all I wanted to eat was popcorn. Lots of it and all the time. I love the stuff, and I don't care if it's plain, covered in seasoned salt, or coated in chocolate. It's good every single time.

This simple recipe begins by popping fresh popcorn kernels. It's then coated in delicious melted white chocolate, combined with dried strawberries, and drizzled with dark chocolate. The flavors combine so well which makes this popcorn snack truly addicting.

I could eat this popcorn any time of year, but I think it is especially a fun treat for Valentine's Day or special occasion. The chocolate and strawberries are exactly what I want to be eating on love day. You could also put this festive popcorn in cute little cellophane bags and hand it out as party favors at a Valentine's Day party. Or dump it in a big bowl for family movie nights!

White Chocolate Popcorn with Strawberries: Ingredients

✽ Popcorn Kernels: I always think freshly popped popcorn on the stove is the best popcorn. Plus, it's easy to make and so much fun to watch them all pop inside the pot. I used yellow popcorn kernels for this recipe. However, if you like the bagged popcorn, you can definitely use that too!

✽ Oil: A little bit of oil inside the saucepan with the popcorn kernels will help the corn pop and not to burn. I use either vegetable oil or olive oil.

✽ White Chocolate: I think creamy white chocolate and popcorn go hand-in-hand. Even my husband who is not a huge fan of white chocolate loves this popcorn! I used Ghirardelli White Chocolate Baking Bars, but you could also use white chocolate chips or white chocolate candy melts as well. You can also use almond bark if you need/want to.

✽ Dried Strawberries: For the strawberries, you can either buy freeze dried strawberries or make your own dried strawberries. I dried my own strawberries, and they are so good! You just need a few hours to dry them out. Check out my recipes for dried strawberries- oven dried strawberries and air fryer dried strawberries.

✽ Dark Chocolate: I debated on whether or not this popcorn needed a dark chocolate drizzle or not, but once I tried the two versions side-by-side, I thought the one with dark chocolate was so much better. All the flavors just go so well together. I used a Ghirardelli Dark Chocolate Baking Bar, but you can also use dark chocolate chips as well!

How to Make White Chocolate Strawberry Popcorn

➊ First, pop that corn! In a large saucepan that has a lid, heat 2 tablespoons oil and 2 popcorn kernels (yes, 2!) over medium heat until both kernels pop. I find that a 5.5 quart saucepan is the perfect size for popping 1/2 cup of kernels.

Remove from the heat (don't turn burner off), pour in 1/2 cup popcorn kernels, and let sit off-heat for one minute.

Put back over medium heat, place lid loosely over the saucepan (so steam can still escape), and cook popcorn kernels until popping stops, shaking the pan occasionally.

Immediately remove pan from heat, and line a large rimmed baking sheet with parchment paper or wax paper. Transfer the popcorn to the prepared large baking sheet. Remove any unpopped kernels.

*If using bagged microwave popcorn, make about 13 cups of popcorn. You could also use an air popper to make your popcorn as well!

βž‹ In a medium glass microwave-safe bowl, melt 6 ounces roughly chopped white chocolate (~3/4 cup white chocolate chips) in the microwave in 30-second intervals on high power, stirring thoroughly after each interval until fully melted. It took a total of 60 seconds cooking time (two 30-second intervals) for mine to melt.

*Do not heat the chocolate for longer than 30 seconds at a time and make sure to really stir it good after each cooking interval to prevent burning. You can also use a double boiler on the stove top to melt your chocolate if desired.

Pour the melted white chocolate all over the homemade popcorn, and stir until combined.

➌ Stir in 1 cup chopped dried strawberries. You can use freeze-dried strawberries or make your own dried strawberries using my oven dried strawberries recipe or air fryer dried strawberries recipe. After combined, arrange popcorn on cookie sheet so that it is in an even layer.

➍ In a medium glass microwave-safe bowl, melt 4 ounces roughly chopped dark chocolate (~1/2 cup dark chocolate chips) in the microwave in 30-second increments, stirring thoroughly after each 30 seconds, until fully melted. It took a total of 60 seconds cooking time (two 30-second intervals) for mine to melt.

Drizzle melted chocolate over popcorn mixture. Let drizzled popcorn chill in the fridge for about 30 minutes or until hardened. Serve the coated popcorn in a large bowl, and enjoy!

Easy Valentine's Day Popcorn Recipe: Questions

✽ Can I use microwave bagged popcorn for this recipe?

Yep! Of course, it will be more buttery than popping your own, but when was adding butter to a recipe a bad thing? Just microwave bag using package directions. This recipe is made for about 13 cups of popped popcorn. So check on the box to see how many bags of microwave popcorn you'll need to get about the same amount.

✽ Should I use chocolate baking bars or chocolate chips?

Either one works! Use your favorite brand of chocolate. You will need 6 ounces of white chocolate which is about 3/4 cup, and 4 ounces of dark chocolate which is about 1/2 cup.

✽ How do I store the leftover popcorn?

This chocolate popcorn should be kept in an airtight container at room temperature. This sweet treat will stay fresh tasting for up to 4-5 days.

✽ Where do I find dried strawberries?

You have a couple of options. You can use freeze-dried strawberries which can be found at most grocery stores. These strawberry pieces will be crunchy and airy.

➌ Stir in dried strawberries.
➍ In a medium glass microwave-safe bowl, melt dark chocolate in the microwave on high heat in 30-second intervals, stirring thoroughly in-between each interval, until fully melted. *It took me 2 intervals (a total of 60 seconds cooking time) for my dark chocolate to melt.* Drizzle melted dark chocolate over popcorn.
➎ Let popcorn chill in fridge for about 30 minutes or until hardened.
