White Chocolate Strawberry Popcorn

This popcorn is so delicious and the perfect snack. Freshly popped kernels are coated in tasty white chocolate, mixed with dried strawberries, and drizzled with melted dark chocolate. It is good any time of year, but I especially love it on Valentine's Day!

Ingredients

• 2 tablespoons oil (vegetable or olive)
• 1/2 cup popcorn kernels
• 6 ounces white chocolate, roughly chopped (or 3/4 cup white chocolate chips)
• 1 cup dried strawberries (freeze-dried or homemade [https://laurathegastronaut.com/oven-dried-strawberries or https://laurathegastronaut.com/air-fryer-dried-strawberries])
• 4 ounces dark chocolate, roughly chopped (or 1/2 cup dark chocolate chips)

Instructions

➊ Line a large rimmed baking sheet with parchment paper or wax paper. In a large saucepan that has a lid, heat oil and 2 popcorn kernels over medium heat until both kernels pop. Remove pan from heat (keep burner on), add the rest of popcorn kernels, and let sit off-heat for one minute. Return to heat and continue cooking until popping stops, shaking pan occasionally. Remove from heat, and pour popcorn onto prepared baking sheet. Remove any unpopped kernels.
➋ In a medium glass microwave-safe bowl, melt white chocolate in the microwave on high heat in 30-second intervals, stirring thoroughly in-between each interval, until fully melted. *It took me 2 intervals (a total of 60 seconds cooking time) for my white chocolate to melt.* Pour melted white chocolate over popcorn, and stir until popcorn is coated.
➌ Stir in dried strawberries.
➍ In a medium glass microwave-safe bowl, melt dark chocolate in the microwave on high heat in 30-second intervals, stirring thoroughly in-between each interval, until fully melted. *It took me 2 intervals (a total of 60 seconds cooking time) for my dark chocolate to melt.* Drizzle melted dark chocolate over popcorn.
➎ Let popcorn chill in fridge for about 30 minutes or until hardened.
