A simple delicious all natural snack.
These dried strawberries are one of my favorite things to snack on. They are a delicious healthy snack! Dried strawberries are perfect for a morning or afternoon snack, make a great topping for oatmeal, yogurt, granola, and cereal, and look so beautiful on cakes, ice cream, and other desserts.
If you have an air fryer then these dried strawberries are super easy to make- all you need to buy are the fresh strawberries! No need for an actual food dehydrator! After a few hours and a little patience, you'll have delicious dehydrated strawberries from fresh fruit.
If you don't have an air fryer, no worries! Another great way to make these dehydrated strawberries is in the oven at a low temperature. Check out my oven-dried strawberries recipes for all the details.

✽ Fresh Strawberries: You only need one ingredient for this recipe- fresh whole strawberries! I just love the simplicity of dehydrated strawberries. To make sure they cook evenly, cut the strawberries into uniform slices. Aim for in between 1/8" to 1/4" thick.
How to Make Air Fryer Dehydrated Strawberries
➊ First step, cut off the tops of the strawberries. Then cut each strawberry into even thin slices with sharp knife. Try to get each slice in between 1/8" to 1/4" thick.
It is important to get the strawberry slices as equal as possible or they will not cook evenly. The thin slices will burn by the time the thick slices are dehydrated.
Place the strawberry slices into the air fryer basket in a single layer without them touching each other. If you are wanting to make a pound of strawberries, you may have to dehydrate in multiple batches depending on how big your air fryer is.
➋ Dehydrate strawberries at 130°F for about 2 hours. *Note that you can still make this recipe if your air fryer doesn't go as low as 130°F. If you dehydrate strawberries at 180°F or 200°F, keep a very close eye on them. Check them multiple times during the cooking process, flip them over at the 1 hour mark, and take them out immediately once they are dried.
After 2 hours, flip each strawberry slice over, and continue dehydrating for 30 minutes to 1 1/2 hours until full dehydrated, checking every 10-15 minutes to ensure they are not burning. I know this is a wide time range, but each air fryer cooks at a different rate, and the cooking time also depends on the exact thickness of the slices.
During the checking process, if you notice that some slices are done before others. For best results, remove them so they do not burn and continue dehydrating the rest until they are done. The dried strawberries should not be soggy and should stay stiff when you pick them up.
Dried Strawberry Recipe (Air Fryer Method): Questions
✽ Do I need to oil the air fryer rack?
I have never oiled the air fryer rack or put down parchment paper prior to drying out strawberries in the air fryer. I have not any any issues with the strawberry slices sticking to the rack.
✽ Do I really need to get all the slices the same size?
In order to get the sliced strawberries to cook evenly, they need to be sliced evenly. Aim for slices that are 1/8" to 1/4" thick. If slices are too thin, they will burn. Thicker slices will take longer to dehydrate than the other slices.
However, I always end up with some slices that are thinner or thicker than the rest. No worries!
After the initial two hours, it is time to flip the slices over. From this point forward, it is very important to check on the strawberries every 10-15 minutes to ensure they are not burning. While checking if you notice some of the slices are done, remove them from the air fryer and continue cooking the rest until all excess moisture is gone.
✽ Can I make these dried strawberries in my oven?
Yes! Another really great and easy way to make dried strawberries is in the oven on a baking sheet. Check out my oven dried strawberries for all the details.
✽ How do you know when the strawberries are done dehydrating?
The strawberries are done when they look and feel dried out. They will no longer be soggy (no liquid and not sticky) and are able to keep firm when picked up.
✽ What texture do air fryer dried strawberries have?
These dried strawberries are slightly chewy. They are not like freeze dried strawberries which are crunchy and airy. If you continue baking the slices, they will turn a brown color and get crispy. While they are still good like that, I very much prefer the chewier consistency.
✽ How do I store leftover dried strawberries, and how long do they last?
Store these dehydrated strawberries in an airtight container at room temperature. I like to store mine in a Mason jar or other types of glass jars.
Fully dehydrated foods last a long time (up to 6 months or longer). However, to get the strawberries to last this long, you need to make sure that all the moisture is out of the fruit. If you are unsure if all the moisture is out, only keep these strawberries for up to 5 days at room temperature.
✽ What do I do if my air fryer doesn't go as low as 130°F?
You can still make this recipe! Dehydrate the strawberries at the lowest temperature you air fryer can go (usually this is 180-200°F). However, you will need to keep a much closer eye on the strawberries when dehydrating at higher temperatures so they do not burn.
After cooking for 1 hour, flip the strawberries over. Continue cooking, checking every 10-15 minutes, until strawberries are fully dehydrated. Remove any strawberry slices that are done cooking before the others so they do not burn.
