These Malibu rum jello shots are perfect for anybody that loves tropical flavors! These beautiful delicious jello shots are made with coconut rum, orange juice, and grenadine. They are full of flavor and perfect for pool parties, summer parties, and hot days.
Bring on all the tropical vibes!
These Jello shots have so much tropical flavor and are so delicious. I have to be careful because I could definitely eat them all at one time. They are basically the Malibu Sunset cocktail in jello shot form. The coconut, orange, and pineapple flavors combine to make very tasty shots. Plus, the yellow from the pineapple Jello, the orange from the orange juice, and the red from the grenadine create such a beautiful red-orange color.
These pineapple flavored Jello shots are absolutely perfect for all summer occasions such as a hot day or a pool party. They also are a huge hit at bachelorette parties to celebrate the bride-to-be!
Malibu Rum Sunset Jello Shots: Ingredients

✽ Orange Juice: Instead of using the usual boiling water for these jello shots, I use pulp-free orange juice. It adds in fresh orange flavor and works so well with the pineapple gelatin.
✽ Pineapple Gelatin Packet (Powder): Pineapple Jello mix is so good and when combined with the orange, grenadine, and coconut rum, it is even better. It's an easy way to get so much pineapple flavor in these shots. I used Island Pineapple Jello for this recipe.
✽ Grenadine: The grenadine syrup adds in sweetness, pomegranate flavors, and that beautiful red color. I used Rose's Grenadine Syrup for this recipe.
✽ Coconut Rum: Coconut rum is the star of the show in these jello shots and bring in all that delicious coconut flavor. Good brands include Malibu Coconut Rum, Captain Morgan Parrot Bay Rum, and Bacardi Coco Rum.
✽ Garnish: Maraschino Cherries and/or Orange Slices: To make these shots extra fun and cute, garnish each shot glass rim with a small orange slice and/or maraschino cherry. You could also garnish with a fresh pineapple wedge or pineapple chunks as well!
How to Make Malibu Sunset Jell-O Shots
➊ In a small saucepan, bring 3/4 cup orange juice to a boil. Whisk the boiling orange juice into 3 ounces of pineapple gelatin powder in a medium mixing bowl or large measuring cup. Whisk for about 2 minutes until all the gelatin dissolves.
➋ Whisk in 1/4 cup of grenadine and 1 cup Malibu rum (coconut rum). Stir well.
➌ Pour gelatin mixture into 2 ounce plastic shot glasses or jello shot cups. You should get about 10 shots. I like to set all the plastic cups on a small baking sheet or cookie sheet so that it is easier to carry them to and from the fridge. Place the shots in the fridge for 3-4 hours or until set.
➍ Right before serving, garnish each shot with a small orange slice and/or maraschino cherry. Cheers!
Pineapple Coconut Rum Jello Shot Recipe: Questions
✽ I can't find pineapple Jello. What else can I use?
If you can't find pineapple Jello, you can swap some of the ingredients around for similar tasting shots. Switch the 3 oz pineapple jello with 3 oz orange jello and switch the 3/4 cup orange juice with 3/4 cup pineapple juice. Keep the grenadine and coconut rum amounts the same.
✽ Can I put more alcohol in these jello shots?
I do not recommend adding more than a cup of liquor to this boozy jello shot recipe. When you change how much alcohol you add, you run the risk of the jello shots not setting properly.
