This Pistachio Coconut Milkshake Cocktail is so delicious, and it is the perfect drink to sip on for St. Patrick's Day... or, really any day of the year- especially a hot summer day. This green cocktail would also be a great Christmas treat. It takes on some tiki vibes with notes of cardamom and coconut alongside the pistachio flavor. Lastly, a splash of tequila is added to make this one tasty and boozy milkshake cocktail.
Pistachio, Coconut, & Cardamom
My goal with this recipe was to create a green cocktail to enjoy on St. Patrick's Day, and I'm so happy with the result.
My first green thought was pistachios. I threw around so many different ideas until I landed on a pistachio milkshake.
One thing I know to be true is that tiki drinks are amazing. We have a local tiki bar here that serves up authentic tiki drinks, and I used some of their drink concoctions to come up with this milkshake.
In addition to pistachio flavorings, I added in coconut cream and cardamom powder. I would come to find out that these flavors go hand-in-hand. As for which liquor to add, I tried a couple, but tequila was by far the best.
And while you can make this pistachio milkshake non-alcoholic (it is still good!), I felt like the tequila definitely added to the experience in the best way possible.
Pistachio Coconut Milkshake Cocktail Ingredients

β½ Pistachio Almond Ice Cream: I originally made this milkshake with vanilla ice cream. It was still good, but the added pistachio flavor that the pistachio almond ice cream added in was preferred. I used Blue Bell Ice Cream to make mine.
β½ Pistachio Instant Pudding Powder: To add in even more pistachio flavoring and green color, I threw in a couple tablespoons of pistachio pudding powder.
β½ Cream of Coconut: I could eat cream of coconut directly out of the can. I love it so much. It sweet and coconut-y and goes so well in this milkshake cocktail. Make sure you are adding cream of coconut and not coconut milk or coconut cream!
β½ Whole Milk: What would a milkshake be without milk? A bit of milk added in will thin out the ice cream, making it much easier to enjoy through a straw.
β½ Cardamom Powder: While adding cardamom is optional to this recipe, I really feel like it elevates the flavor. Just a bit will do!
β½ Silver Tequila: Tequila compliments the pistachios so well. However, you can make this milkshake non-alcoholic by simply leaving out the tequila.
β½ Garnishes: I like to top my pistachio milkshake cocktail with some whipped cream and crushed pistachios!
How to Make Pistachio Coconut Milkshake Cocktail
β In a blender, combine 5 scoops of pistachio almond ice cream (this will be about 1 3/4 cups, but it doesn't need to be exact), 2 tablespoons pistachio instant pudding powder, 1/4 cup cream of coconut, 1/4 cup whole milk, and 1/4 teaspoon cardamom powder (optional). Blend until fully combined and smooth.
β Add in 1.5 ounces (3 tablespoons) silver tequila, and blend a couple seconds longer.
β Pour into a large glass, and top with whipped cream and crushed pistachios. Cheers!

β½ What is cardamom?
Cardamom comes from the seed pods of plants that belong in the ginger family. There are two types of cardamom- green and black. It's taste is hard to pinpoint, but it has a sweet flavor to it with hints of lemon and mint. You may find it in both savory and sweet recipes.
β½ Why are pistachios green?
According to Harold McGee, pistachios are green for the same reason that plants are- chlorophyll. They also have something called carotenoids (lutein and zeaxanthin) which are plant pigments that act as antioxidants.
The chlorophyll and the carotenoids act together to give the pistachios their famous green color- making them a perfect St. Patrick's Day snack. Also, the pistachios that are grown in cooler climates will be a more vibrant green than ones grown in warmer climates.
β½ Can I make this milkshake non-alcoholic?
Yep, you betcha! I've tried it with and without tequila, and it was delicious either way. However, I felt like the tequila really added to the milkshake so, for that reason, I wrote the recipe up as a boozy milkshake.
β½ Changing up the consistency of the milkshake:
At the end of making the milkshake, you may prefer a different consistency. No big deal. If you'd like it thicker, add in a couple scoops of ice cream. For a thinner milkshake, add in a bit more milk.
