This pumpkin ice cream punch is exactly what your Halloween party needs. You can use store-bought pumpkin ice cream, but I highly recommend making your own no-churn ice cream for this punch. Your taste buds will thank you!

The ice cream is made with real pumpkin and has all those delicious fall spices. When added to the punch, it becomes creamy and frothy. The punch has so many other great flavors added for a super scrumptious punch. It will for sure become a Halloween favorite. This delicious recipe is also a great addition to a Thanksgiving menu.

✽ Pumpkin Ice Cream: You could use store-bought pumpkin ice cream, but I like to make my own no-churn ice cream for a fresh pumpkin taste! It consists of pumpkin puree, heavy cream, egg, brown sugar, vanilla extract, & warm spices

✽ Spiced Rum: You can substitute with another liquor or completely leave it out if you wish. I like the addition of rum because it pairs so well with the all the other favorite fall flavors.

✽ Orange Juice Concentrate: Using concentrate really brings in big orange flavor to this punch.

✽ Apple Cider: The fresh apple cider you can buy from the store will give you the best punch. Or go above and beyond and make your own homemade apple cider.

✽ Lemon Juice & Lime Juice: Adds tartness to the punch. Freshly squeezed citrus juice tastes the best.

✽ Ginger Beer: Adds a little fizz and ginger flavor which pairs so well with pumpkin. This really makes it feel like fall! You could substitute with ginger ale if needed, but the ginger beer is going to add a lot more flavor to the punch.

✽ Sparkling Wine: Adds so much carbonation to the punch and helps balance out all the flavors.

How to Make Pumpkin Ice Cream Punch

➊ First, let's make the pumpkin ice cream. If you are using store-bought pumpkin ice cream, you can skip this step. In a medium bowl, whisk together 1 egg, 1/2 cup brown sugar, 1 tsp vanilla extract, 1 1/2 tsp cinnamon, 1/2 tsp nutmeg, 1/2 tsp ground ginger, 1/4 tsp ground cloves, and 1/4 tsp kosher salt. Whisk until mixture thickens slightly and you get ribbons (see picture below).

Homemade Pumpkin No-Churn Ice Cream

In a saucepan, heat 2 cups of heavy cream over medium heat, stirring occasionally, just until boiling. Remove from heat. Pouring in a small stream and whisking constantly while you pour, slowly add boiling cream to the egg mixture.

Homemade Pumpkin No-Churn Ice Cream Recipe

Whisk until well combined, and pour into a clean saucepan. Put saucepan over medium heat, stirring constantly, until mixture thickens enough to coat the back of a spoon (about 4-6 minutes). Add in 3/4 cup of pumpkin puree and stir until well combined. Pour mixture into a metal loaf pan, and put into the freezer for at least 8 hours until frozen.

βž‹ Now let's make that punch. In a large punch bowl, mixing bowl, or large pitcher, pour in 1 1/2 cups of spiced rum, 12 ounces orange juice concentrate, 4 cups of apple cider, 1/2 cup lemon juice, and 1/4 cup of lime juice. Stir until the orange juice concentrate is melted and fully mixed in.

Pour in 24 ounces of your favorite ginger beer and top with 1 bottle (750 mL) of sparkling wine.

Now scoop in that pumpkin ice cream! Put as much or little as your heart desires. I go for about 8 good scoops! If desired, garnish glasses with cinnamon sticks or fresh fruit such as apple slices or orange slices. Cheers!

✽ Why do you add the boiling cream slowly to the egg mixture?

The hot cream must be added slowly in a small stream to the eggs so that the eggs do not scramble. This will temper the eggs and allow them to be heated later without clumps forming.

✽ Can you substitute the spiced rum?

Absolutely! You can substitute with another liquor or you can leave it out completely.

✽ Can I use store-bought pumpkin ice cream?

You bet! I just like to make my own because I like big spices and big real pumpkin flavor, but pre-made pumpkin ice cream is good too!

Ingredients

For Pumpkin Ice Cream (or can also use store-bought ice cream):

β€’ 1 egg
β€’ 1/2 cup brown sugar
β€’ 1 teaspoon vanilla extract
β€’ 1 1/2 teaspoon cinnamon
β€’ 1/2 teaspoon nutmeg
β€’ 1/2 teaspoon ground ginger
β€’ 1/4 teaspoon ground cloves
β€’ 1/4 teaspoon Kosher salt
β€’ 3/4 cup pumpkin puree

For Punch:

β€’ 4 cups fresh apple cider
β€’ 12 ounces orange juice concentrate
β€’ 1 1/2 cups spiced rum
β€’ 1/2 cup lemon juice
β€’ 1/4 cup lime juice
β€’ 24 ounces (3 cups) ginger beer
β€’ 750 mL sparkling wine
β€’ ~8 scoops Pumpkin ice cream

Instructions

➊ Make the pumpkin ice cream: In a bowl, whisk together egg, brown sugar, vanilla, and spices until mixture thickens slightly and a ribbon forms (see picture above).
βž‹ In a saucepan, heat cream over medium heat, stirring occasionally, until boiling. In a small stream and whisking constantly while pouring, pour boiling cream very slowly into the egg mixture. Whisk until fully combined, and pour into a clean saucepan.
➌ Heat the mixture over medium heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon (about 4-6 minutes). Remove from heat , and stir in pumpkin puree. Mix until well combined. Pour mixture into a metal loaf pan, and freeze for at least 8 hours or until frozen.
➍ Make the punch: In a large punch bowl or mixing bowl, combine apple cider, orange juice concentrate, spiced rum, lemon juice, and lime juice. Stir until orange juice concentrate melts and everything is mixed together.
➎ Add in ginger beer and sparkling wine. Scoop in pumpkin ice cream, and give a quick stir. Enjoy!
