Dill Pickles, Garlic, & Pizza- A combination that you need in your life.
A couple years or so ago I saw that delicious viral pizza photo on Facebook. Is that why you are here too? It was a photo of an amazing looking pizza.
It was a white sauce pizza piled high with stringy mozzarella cheese, drizzled with some kind of garlic ranch dressing, and topped with pickles. I immediately screenshotted the pizza and sent it to my husband with a text saying, 'I need to find this pizza.'
As time went on, the pickle pizza and myself never crossed paths, unfortunately. Until I was scrolling through old photos on my phone the other day and ran across the mouthwatering picture.
Solely using just that picture as a guide, I threw together some ingredients that I thought the best pickle pizza might consist of. The result was even better than I had imagined.
The homemade fresh dill pizza crust, the garlicky and cheesy white sauce, the large amount of gooey mozzarella cheese, the creamy garlic sauce, and, of course, the delicious dill pickles- this tasty pickle pizza has just earned itself a spot in my regular pizza rotation. A must for any pickle fan!

✽ Homemade Pizza Dough with Dill: This pizza crust is super simple and super quick to make. It only takes about 10 minutes! It consists of instant yeast, warm water, olive oil, salt, sugar, all-purpose flour, and fresh dill weed.
✽ White Sauce: This white sauce really makes the pizza stand out. It is filled with all the garlic flavors plus it is super cheesy! This would even be really good when used as an alfredo sauce for a pasta dish. It's quick to make and is made with simple ingredients- butter, garlic, flour, milk, Italian seasoning, salt, pepper, and Parmesan cheese. I found using fresh garlic instead of garlic powder and/or onion powder really makes this sauce taste so good.
✽ Mozzarella Cheese: The mozzarella pairs really nicely with the white sauce and Parmesan cheese. It also adds great flavor- especially when it browns a bit in the oven. I love how stringy it is when you pull the pizza pieces apart!
✽ Round Dill Pickle Chips: Can't have a pickle pizza without pickles! I like to go with classic hamburger dill pickle slices. While I have never tried it, I bet you could use sweet pickles instead. I just think the dill pickles pair so well with the other ingredients used in this pizza recipe.
✽ Creamy Garlic Dill Sauce: This sauce is very similar to a homemade ranch dressing. It's also quick to make! The ingredients for this sauce are sour cream, mayonnaise, garlic, fresh dill, and dill pickle juice.
✽ Final Toppings: Right before digging in, I like to sprinkle a bit of red crushed pepper and more chopped fresh dill on top of the pizza. A bit of hot sauce on top is really yummy too!
How to Make Dill Pickle Pizza Recipe
① Preheat oven to 425°F.
② Make the Dill Pizza Crust: In a medium bowl, add 1 1/4 teaspoons instant yeast to 1/2 cup of warm water. Let sit for 5 minutes.
*You want your water to be 110°F. This is about the temperature you are just able to put your finger in the water comfortably. If your yeast mixture does not get frothy, this means your yeast is probably dead, and you will need to start over with new yeast.
③ Add 1 tablespoon olive oil, 1/2 teaspoon salt, 1/2 teaspoon sugar, 1 1/4 cups of all-purpose flour, and 1 tablespoon chopped fresh dill to the bowl of yeast. Stir with a wooden spoon until it all comes together. You may need to knead the dough 1-2 minutes until it forms a smooth ball. *See picture below.* Cover with a clean kitchen towel and set aside.
④ Make the Garlic White Sauce: In a medium saucepan, add 2 tablespoons of butter and 3 minced garlic cloves. Place over medium heat. Once the butter is melted, whisk in 2 tablespoons of flour. Cook for 1 minute, whisking constantly.
⑤ Slowly pour in 1 cup of whole milk to the saucepan while whisking. Whisk in 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. While whisking frequently, continue to cook over medium heat until mixture becomes thick, about 4-5 minutes.
⑥ Once the sauce has thickened, lower the heat to low. Stir in 1 cup (3 ounces) of shredded Parmesan cheese. Continue to stir until cheese has fully melted. Remove from heat and set aside.
⑦ Prepare Pizza: On a lightly floured surface, roll out dough with a rolling pin until it is a 12-inch circle. Transfer dough to a lightly oiled pizza pan (recommended) or a baking sheet pan.
Spread the garlic white sauce on top of the rolled out dough. Spread the sauce all over the dough except leave about 1/2" of dough exposed around the edge of the pizza so there is a crispy crust.
This is a very saucy pizza! While you don't have to add all of the sauce, I felt like this amount of sauce was perfect for my taste!
On top of the white sauce, evenly sprinkle on 2 cups (8 ounces) shredded mozzarella cheese.
⑧ Dry 16 round pickle chips with paper towels. This will prevent the pickles from making the pizza soggy. Add pickles to top of pizza.
⑨ Bake Pizza: Bake pizza for on the middle rack of the oven for 15-20 minutes or until cheese is melted and slightly browned.
⑩ Make Creamy Garlic Sauce: While the pizza is baking, make the creamy garlic sauce. In a medium bowl, beat together 1/4 cup sour cream, 1/4 cup mayonnaise, 1 minced (or mashed) garlic clove, 2 tablespoons dill pickle juice, and 1 tablespoon chopped fresh dill with a spoon until well combined.
⑪ Serve Pizza: After pizza is done baking, sprinkle with 1 tablespoon chopped fresh dill, crushed red pepper (if desired), and drizzle with the creamy garlic-dill sauce. Use any leftover garlic sauce to dip pizza slices into for those who like a lot of sauce!
Garlic Pickle Pizza: Questions
✽ Do pickles really taste good on top of pizza?
Yes, yes, and yes! People enjoy putting briny foods on top of their pizza such as olives and pickled peppers so why not pickles too! The saltiness and tartness of the pickles works so well with the mozzarella cheese and garlic.
My only regret is that I didn't start putting pickles on my pizza sooner.
✽ Can I use pre-made pizza dough?
Yes, you can. However, I highly recommend this dill pizza crust. It's really simple and quick to make. I personally think it tastes much better than pre-made crusts. Plus, you get the dill flavors throughout the entire pizza which is so delicious!
✽ Where did pickle pizza originate?
According to Atlas Obscura, Kathy Szuba and her daughter are credited for the invention of pickle pizza in August 2018. Kathy was an employee at Rhino's Pizzeria in Rochester, New York.
She came up with the idea for a dill pickle pizza after attending a pickle festival. The customers went wild for the pickle pizza samples, and it's been on their menu ever since.
Cindy Arena, the pizzeria manager, claims to go through five gallons of pickles every day!
✽ What types of meat would be good on this pizza?
If you want to add some protein on top of this pizza, Canadian bacon and regular bacon would be delicious options! I also think ground beef (think cheeseburger pizza) and chicken (think chicken sandwich vibes) would be good too.
