This delicious breakfast casserole is filled with everything you'd find in a tasty breakfast burrito- hash browns, chorizo, cheese, beans, jalapenos, and eggs! This casserole is so easy to whip together and is sure to be a huge hit! It makes the perfect breakfast on Christmas morning.

It's a Christmas tradition that we eat breakfast casserole on Christmas morning. Breakfast casseroles are a great choice because they are easy, quick, and absolutely delicious. You can even make it the day before and just pop it in the oven the morning of! This year I decided to spice it up a little bit and try a casserole made with chorizo.
When creating this recipe I pretty much threw in anything that I would want inside of my chorizo breakfast burrito- cheese, potatoes, peppers, onion, eggs, beans, and all those tasty seasonings. I personally think it is especially great when served with sour cream, avocado, and salsa. This chorizo breakfast casserole has become a new family favorite, and I can't wait to eat it again on Christmas morning!
Chorizo Egg Casserole Ingredients

β½ Ground Pork Chorizo: Chorizo sausage is one of my breakfast favorites. Ground chorizo will add in so much flavor to this casserole.
β½ Onion + Jalapeno + Garlic: The combination of fresh onions, jalapenos, and garlic is the best. You can decide how many jalapenos you want to add depending on how spicy you'd like this dish. I usually dice up two jalapenos. You can also remove the seeds of the jalapenos if you prefer less spice but still want that jalapeno flavor. If you really do not want any heat, you can substitute the jalapenos with green bell peppers or a red bell pepper.
β½ Diced Green Chiles: These chiles will add just a bit of spice to the dish, but I mainly throw them into this casserole because I love how they taste! These green peppers go so well with all the other ingredients.
β½ Frozen Shredded Hash Browns: I can never get enough hash browns in my life. These shredded potatoes will be the base of this casserole. Make sure that the hash browns are completely thawed before adding them to the casserole dish. If you bake them while still frozen, you will end up with a watery casserole. Nobody wants that. I usually use Simply Potaotes Shredded Hash Browns, Ore Ida Hash Browns, or Mr. Dell's Hash Browns.
β½ Refried Beans: If you love beans as much as I do then this casserole is for you. I always ask for refried beans in my breakfast burritos so why not add them to my breakfast casseroles as well. So good!
β½ Sharp Cheddar Cheese + Pepper Jack Cheese: What's a casserole without cheese? I chose to use two different kinds of cheese for more flavor. The sharpness of the cheddar makes this casserole pop while the pepper jack cheese is a great way to add in a bit of spice and a lot of flavor. If needed, you can substitue the pepper jack cheese with monterey jack cheese. For ultimate melty goodness, shred your own cheese from a block rather than using pre-shredded cheese.
β½ Eggs: Of course there is eggs inside of a breakfast casserole. My favorite thing about the eggs is that when they are poured on top of the casserole they run all the way down ensuring that there is egg all throughout this casserole. I used large eggs for this recipe.
β½ Half & Half: I chose half & half because milk made the casserole a little too watery while heavy cream made it a little too thick. If you can't find half & half, substitute the 1 1/2 cups of half & half with 3/4 cup whole milk + 3/4 cup heavy cream.
β½ Seasonings: kosher salt, dried oregano, cumin, chili powder, paprika, black pepper, + cayenne pepper: This combination of seasonings is my go-to when making dishes that contain chorizo and potatoes. They all combine together to make a very flavorful and tasty dish.
β½ Optional Toppings:: Top and serve this breakfast casserole with whatever you like. Some great options are fresh cilantro leaves, pico de gallo, hot sauce, fresh avocado slices, salsa, green onions, sour cream, diced red onion, and jalapeno slices.
How to Make Breakfast Chorizo Casserole
β Preheat oven to 350Β°F. In a large skillet, cook 1 pound ground pork chorizo over medium high heat for about 2 minutes until it releases some grease. Add in 2/3 cup diced onion and 1-2 diced jalapenos. Continue cooking for an additional 5 minutes or until onions are softened, stirring occasionally. Add oil as needed if sticking. I find that when I'm cooking with chorizo I usually do not need to add in oil because the chorizo is usually pretty greasy on its own. Stir in 2 cloves of minced garlic and cook for about 30 seconds until fragrant. Stir in 4 ounces canned diced green chiles, and remove from heat. Set aside.
β In a 9x13 greased casserole dish, stir together 20 ounces thawed shredded hash browns and 16 ounces refried beans. Spread evenly on the bottom of the baking dish.
β Top hash brown + bean layer with 1 cup shredded sharp cheddar cheese and 1 cup shredded pepper jack cheese.
β Top the cheese layer evenly with the prepared chorizo meat mixture.
β In a large bowl, whisk together 10 eggs, 1 1/2 cups half & half, 1 teaspoon kosher salt, 1 teaspoon dried oregano, 1 teaspoon cumin, 1 teaspoon chili powder, 1/2 teaspoon paprika, 1/2 teaspoon ground black pepper, and, if desired, 1/4 teaspoon cayenne pepper.
β Evenly pour the egg mixture on top of the chorizo layer of the casserole. Top casserole with leftover 1/4 cup shredded sharp cheddar cheese and 1/4 cup shredded pepper jack cheese.
β Bake breakfast casserole in oven for 50-60 minutes or until cooked through. You want the top to be browned and the center to be just slightly jiggly. Top and serve with cilantro leaves, avocado slices, salsa, sour cream, diced onions, and/or jalapeno slices.

Store any leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or oven.
β½ Can you freeze breakfast casserole?
Yes, you can freeze this casserole after you have baked it. Place individual servings of baked casserole in freezer plastic bags. Thaw frozen breakfast casserole in the fridge overnight, and then bake like normal- at 350Β°F for about 1 hour or until cooked through.
β½ Breakfast Casserole Burrito
One of my favorite things about this casserole is that it can be made into a burrito. All of our leftover breakfast casserole gets put into a big tortilla, covered with salsa, and is eaten as a big breakfast burrito. It is so amazing. So if you are a big fan of burritos, serve this casserole alongside some fresh flour tortillas!

Ingredients
β’ 1 pound ground pork chorizo
β’ 2/3 cup onion, diced
β’ 1-2 jalapenos, diced
β’ 2 garlic cloves, minced
β’ 4 ounces canned green chiles, diced
β’ 20 ounces hash browns, thawed & shredded
β’ 16 ounces refried beans
β’ 1 1/4 cup (5 ounces) sharp cheddar cheese, shredded, divided
β’ 1 1/4 cup (5 ounces) pepper jack cheese, shredded, divided
β’ 10 eggs
β’ 1 1/2 cups half & half
β’ 1 teaspoon kosher salt
β’ 1 teaspoon dried oregano
β’ 1 teaspoon cumin
β’ 1 teaspoon chili powder
β’ 1/2 teaspoon paprika
β’ 1/2 teaspoon ground black pepper
β’ 1/4 teaspoon cayenne pepper, optional
β’ Suggested Toppings: cilantro leaves, avocado slices, sour cream, salsa, diced onions, sliced jalapenos
Instructions
β Preheat oven to 350Β°F.
β In a skillet, cook chorizo over medium-high heat for about 2 minutes until some grease is released. Stir in onion and jalapeno, and continue cooking for 5 minutes or until onion is softened. Add in garlic and cook for an additional 30 seconds until fragrant. Stir in green chiles, and remove from heat. Set aside.
β In a 9x13 greased casserole dish, mix together thawed hash browns and refried mix. Spread evenly on the bottom of the casserole dish.
β Evenly sprinkle 1 cup of the sharp cheddar cheese and 1 cup of the pepper jack cheese over the hash brown + bean mixture.
β Add prepared chorizo mixture on top of the cheese layer.
β In a large mixing bowl, whisk together eggs, half & half, and seasonings until fully combined. Pour egg mixture on evenly top of the casserole.
β Top the casserole with the remaining cheese.
β Bake casserole in oven for 50-60 or until cooked through. The top should be browned and the middle should only be slightly jiggly. Serve casserole with preferred toppings.
