This strawberry gin cocktail with sparkling wine is one of my favorite drinks. It has a simple homemade strawberry sauce mixed in that is made from frozen strawberries. The strawberry sauce is shaken with gin and lime juice for a sweet, herbal, slightly tangy cocktail. To make it extra delicious and bubbly, it's topped with champange. This is a great Halloween cocktail when it's garnished with lime peel vampire fangs!
• 1/4 cup sliced frozen strawberries
• 1/4 teaspoon sugar
• 1 1/2 ounces gin
• 1/2 ounce lime juice
• 2 ounces sparkling wine
➊ Defrost strawberries for 90 seconds at 30% power in the microwave. Force thawed strawberries through a sieve until you get about 1 ounce of juice. Whisk in sugar.
➋ In a cocktail shaker, add 1 ounce of the strawberry sauce, gin, lime juice, and a couple of ice cubes. Shake for about 10 seconds until chilled.
➌ Strain into cocktail glass and top with sparkling wine.
