Kiwi Sour Apple Moscow Mule

This Kiwi Sour Apple Moscow Mule may be may favorite cocktail ever. I made it for St. Patrick's Day celebrations because of its beautiful green color, but it's now become my favorite drink all year long. This Moscow mule is made with kiwi puree, sour apple schnapps, and vodka. It's topped with delicious ginger beer for great flavor and to make it fizzy.

Ingredients

• 2 kiwi, roughly chopped
• 2 Tablespoons sugar
• 1 Tablespoon lime juice
• 2 ounces sour apple schnapps
• 2 ounces vodka
• 8 ounces ginger beer
• Garnish: candied ginger, lime wedges, and/or kiwi slices

Instructions

➊ In a small saucepan, combine kiwi, sugar, and lime juice. Place over medium heat until simmering. Once simmering, continue cooking for 5 more minutes, stirring occasionally and smashing large kiwi pieces with back of spoon. Remove from heat.
➋ Once kiwi mixture has cooled for a few minutes, pour into blender. Puree until smooth.
➌ In a cocktail shaker, combine 2 ice cubes, 2 ounces kiwi mixture, sour apple schnapps, and vodka. Shake until chilled, about 10 seconds.
➍ Fill two copper mugs halfway with crushed ice. Strain half of the cocktail mixture into each mug.
➎ Top each mug with 4 ounces of ginger beer, and garnish. Cheers!
