Goat Cheese and Prosciutto Dates (Halloween Roaches)

These Halloween Roaches do not just look like creepy bugs, they also are absolutely delicious! The dried dates are filled with goat cheese and wrapped in prosciutto. I like to cut additional dried dates to make antennae and legs to give those eating these appetizers a real fright. These tasty roaches are perfect for spooky season and Halloween parties!

Ingredients

• 12 pitted dried dates
• 4 ounces goat cheese
• 2-4 slices prosciutto

Instructions

➊ Preheat oven to 350°F.
➋ Cut a slit down one side of 8 dried dates, and evenly fill the dates full of goat cheese.
➌ Cut a piece of prosciutto into about a 4" x 3" rectangle. Fold the prosciutto in half. Using a toothpick, adhere the prosciutto to the bottom side of the roach.
➍ Bake the roaches on a baking sheet for 3-5 minutes just until the prosciutto becomes crispy.
➎ Using the extra 4 dried dates, cut thin strips. These will be the roaches' legs and antennae. You will need six legs and two antennae for each roach.
➏ Once the dates are cool enough to hand, use a toothpick to prick small holes into the dried date. 3 small holes on the left side, 3 small holes on the right side, and two small holes in the front. Carefully insert the small strips of dried date into the holes.
