Black Bean Dip

This black bean dip recipe is super delicious and so easy and quick to make. This dip is made with canned black beans, fresh jalapenos, garlic, and red onions, and all the tasty seasonings. When topped with cilantro, cotija cheese, and hot sauce, this dip is very addicting- especially when paired with a bag of tortilla chips. It's the perfect snack and appetizer and also makes a great addition to tacos and burritos!

Ingredients

• 4 tablespoons butter
• 1/2 cup red onion, chopped
• 2 jalapenos, chopped
• 2 garlic cloves, minced
• 30 ounces canned black beans
• 2 tablespoons lime juice
• 1/3 cup packed cilantro leaves
• 1 teaspoon hot sauce
• 1 teaspoon kosher salt
• 2 teaspoons cumin
• 1/2 teaspoon smoked paprika
• 1/2 teaspoon chili powder
• 1/4 teaspoon cayenne
• Optional: cotija cheese, hot sauce, cilantro leaves, for topping

Instructions

➊ In a non-stick skillet, melt butter over medium heat. Add in onions and jalapenos, and cook for about 5 minutes until softened. Do not brown. Add in garlic and cook for an additional 30 seconds until fragrant.
➋ In a food processor, add in cooked onions and jalapenos with butter, black beans, lime juice, cilantro, hot sauce, and seasonings.
➌ Process everything until fully combined. You may have to scrape the dip down on the sides to get it all to mix together.
➍ Pile into serving bowl, and top with cotija, hot sauce, and cilantro leaves, if desired.
