This fava bean (broad bean) dip is garlicky, creamy, and so delicious. It's made from dried fava beans and resembles a hummus recipe. If you are a fan of hummus then you will definitely be a fan of this fava bean dip as well. Serve it up with your favorite chips, pita bread, or veggies. Fava bean dip is the perfect snack and appetizer.
• 6 ounces (150 grams) dried fava beans
• 1/2 Tablespoon kosher salt
• 1/3 cup tahini
• 1/4 cup olive oil, plus extra for drizzling
• 1/4 cup lemon juice
• 2 garlic cloves, minced
• 1 teaspoon ground cumin
• 1/2 teaspoon kosher salt
• Sumac, for topping
➊ Soak the fava beans: In a large pot or bowl, cover dried fava beans with 4 cups of water. Let soak overnight or for 8 hours. Drain.
➋ Cook the fava beans: Peel the fava beans. Combine soaked, peeled beans with 4 cups of water and salt in a large pot. Cook over high heat until boiling then reduce heat to maintain a simmer. Cook for 25-45 minutes. After 20 minutes, check the beans every 5 minutes for doneness. You want the beans to be tender but not mushy. Drain.
➌ Make dip: In a food processor, combine cooked beans, tahini, olive oil, lemon juice, garlic cloves, cumin, and salt. Pulse for 30-60 seconds until well combined. Taste dip and add more tahini, olive oil, lemon juice, garlic, or seasonings if desired.
➍ Transfer to a serving bowl. Drizzle with extra olive oil and sprinkle with sumac. Serve with pita or crusty bread.
