Avocado Margarita

This green avocado margarita is so delicious and creamy! It's made with tequila, triple sec, and lime juice. A bit of homemade cilantro and jalapeno simple syrup is shaken in for added flavor a little bit of spice. Give the margarita glass a Tajin seasoned rim for the perfect cocktail. Because of this margarita's greenness, it makes for a great Halloween cocktail!

Ingredients

For the jalapeno cilantro simple syrup:

• 1/2 cup water
• 1/2 cup sugar
• 1/2 cup (small bunch) cilantro leaves & stems
• 1 jalapeno, sliced

For the margarita:

• 1 avocado, sliced
• 4 ounces silver tequila
• 2 1/2 ounces triple sec
• 1 1/2 ounces lime juice
• 3/4 ounces jalapeno cilantro simple syrup
Lime wedge + Tajín (or sea salt), for rim
Lime wheel, for garnish

Instructions

➊ In a small saucepan, combine water and sugar and cook over medium-low heat, stirring frequently. Just when sugar has dissolved remove from heat (do not let it boil!). Add cilantro and jalapeno, and let cool at room temperature (about 15-20 minutes). The longer it sits, the more flavorful it will be. Strain out cilantro and jalapenos when ready to use.
➋ In a blender, combine avocado, tequila, triple sec, lime juice, and 3/4 oz simple syrup. Puree until smooth.
➌ Run a lime wedge along the edge of the margarita glasses. Twirl glasses in a small pile of Tajín (or sea salt) to rim the glass.
4. Pour avocado margarita into glasses, garnish with a lime wheel, and enjoy!
