Avocado Jalapeno Deviled Eggs

I can't eat enough of these spicy savory deviled eggs. These eggs are made with avocado, slightly spicy from the jalapeno, and have added flavor from the addition of ingredients that pair with avocado. Oh, and you can't forget the bacon! These eggs are so good and so easy to make. Due to their green color, they make an excellent appetizer for Christmas and holiday parties!

Ingredients

• 6 eggs
• 2 strips thick-cut bacon
• 1 medium avocado
• 1 tablespoon jalapeno, minced
• 1 tablespoon cilantro leaves, minced
• 2 teaspoons worcestershire sauce
• 2 teaspoons lime juice
• 1 teaspoon Dijon mustard
• 1/2 teaspoon cumin
Black pepper, to taste
Salt, to taste
• 6 thin jalapeno slices, halved
Paprika, for topping

Instructions

Boil the eggs: In a large pot, place eggs in a single layer. Fill with water, 1 inch above the eggs. Place the pot over medium-high heat until it begins to boil. Once boiling, remove from heat, cover with lid, and let sit for 10 minutes. After 10 minutes, remove the eggs with a spoon and place in a bowl of cold water.
Cook the bacon: In a non-stick skillet, cook bacon strips until crisp. Remove from skillet, and drain on a paper towel-lined plate. Cut each strip of bacon into 6 pieces so you end up with a total of 12 pieces.
Make filling: Once eggs are cooled, peel them and discard the shells. Using a sharp knife, cut each egg in half lengthwise. Scoop the egg yolks into a medium bowl. Add the avocado, jalapeno, cilantro, worcestershire sauce, lime juice, Dijon, and cumin. Using the back of a fork or spoon, mash the egg yolks and avocado and continue to mix all ingredients together until smooth and creamy. Taste test the filling, and add pepper and salt in small amounts until it is to your liking. *The amount of salt you add all depends on exactly how big your eggs and avocado are. Add VERY small amounts of salt at at time until the filling is flavorful and seasoned well.* Scoop or pipe the egg yolk mixture into each of the hollow egg whites.
Add Decoration: Add a piece of bacon and halved jalapeno slice to each deviled egg. Lastly, sprinkle with a bit of paprika.
